Growing up Christmas cookies were all about the Shortbread. All buttery and decadent they were a special treat. My Mom has since stopped making these but this year I’ve stolen the recipe and will be making them for gifts and to eat as well. I know these aren’t exactly healthy but I look at it this way. You know what is in the cookies versus store bought and they taste so good. Really who wants to spend their calories on mediocre cookies?
- In beater bowl combine all cookie dough ingredients until thoroughly blended. Use hands if dough becomes stiff.
- Shape all of the dough into 1 inch balls.
- Bake at 300F for 20 minutes.
- Cool 10 minutes then lift onto rack to cool.
